WINEMAKING
Minimum intervention.
Grapes chilled for 24 hours before pressing.
Rigorous selection by personnel, followed by destemming and a gentle crush in a vertical press.
Spontaneous cold fermentation interrupted by bottling at designated density then continued in-bottle for approx. 30 days.
6 months of additional lees contact ageing. Manually disgorged in February.
Aged in bottle for a further 8 months minimum.
TASTING NOTE
Lemon yellow in appearance. Aromatic ripeness on the nose hints at baked apples and quince. The bubbles invigorate, not overwhelm, carrying just the right lift through bitter hints to the finish.
