WINEMAKING
Minimum intervention.
Grapes chilled for 24 hours before pressing.
Rigorous selection by personnel, followed by destemming and a gentle crush in a vertical press.
Spontaneous cold fermentation, approx. 15 days.
Malolactic fermentation in barrel, then 6 months’ lees ageing and stirring.
Gently filtered before bottling.
Bottles laid down by hand for further ageing.
TASTING NOTE
Brilliantly clean with golden reflections. Intense nose notes of ripened fruits. A warm, voluptuous attack highlights ripeness and good acidity in this well-balanced blend.
