We harvest the grapes by hand in the second half of September, in vine stocks with more than 20 years, in strict dry land. On slopes where the red slate predominates.
We ferment with maceration on skins for a month in the amphora, then the aging continues for 12 months in the same amphora, on its lees, under a light flower veil. They are amphorae / clay jars with more than 200 years of old from the zone, with capacities between 800 and 1500 litres. All marked by a craftsman.
The amphora fully respects the characteristics of the grape, which evolves to a higher state. It offers the wine the opportunity to reconnect with its land, with which the amphora was made. We believe in the existence of an intrinsic memory, it is a tribute to our ancestors. A wine that makes you breath the earth.
Depending on the vintage, it usually has between 14.0 and 14.5% vol. In a 750 ml burgundy bottle closed with a single piece cork cap. Very limited production of 2350 bottles. It is a mid-depth wine. With a seductive fruit nose. Attractive tension in the mouth and extremely mineral profile. It has a multitude of pairings.
